Ingredients:

1 cup whole wheat flour

1 boiled potato (mashed)

1 small carrot (grated)

1/4 cup paneer (crumbled)

Spices: salt, red chili powder, garam masala

Chutney/ketchup for spreading

Instructions:

Knead dough using flour and water. Let it rest.

Mix potato, carrot, paneer, and spices.

Roll small parathas, stuff with filling, cook both sides.

Spread chutney, roll, and pack.


2. Mini Idli Fry


Ingredients:

10 mini idlis (use idli batter)

Mustard seeds, curry leaves

1 tsp sambar powder

Oil, salt

Instructions:

Make mini idlis using idli mould.

In a pan, heat oil, add mustard seeds, curry leaves.

Add idlis, sprinkle sambar powder, toss well.


3. Paneer Bhurji Sandwich



Ingredients:

1/2 cup paneer (crumbled)

1/4 onion (chopped)

1/4 capsicum (chopped)

Bread slices

Salt, pepper, turmeric

Instructions:

Saute onion and capsicum.

Add paneer and spices. Mix well.

Spread on bread. Toast or grill.


4. Veggie Suji Upma

Ingredients:

1/2 cup suji (semolina)

Mixed vegetables (carrot, peas, beans)

Mustard seeds, green chili, ginger

Water, oil, salt

Instructions:

Roast suji and keep aside.

Saute mustard, chili, ginger, veggies.

Add water and bring to boil. Stir in suji slowly.

Cook until soft.


5. Lemon Rice

Ingredients:

1 cup cooked rice

Mustard seeds, curry leaves

Green chilies, peanuts

Turmeric, lemon juice, salt

Instructions:

In oil, temper mustard, curry leaves, chili, peanuts.

Add turmeric, rice, salt.

Finish with lemon juice. Mix and pack.


6. Besan Chilla Wrap


Ingredients:

1/2 cup besan (gram flour)

Chopped onion, coriander, chili

Spices: salt, turmeric, ajwain

Cheese or chutney (optional filling)


Instructions:

Mix batter with water to pancake consistency.

Pour on pan, cook both sides.

Fill, roll, and pack.


7. Veg Maggi with a Twist


Ingredients:

1 pack Maggi

Mixed veggies (capsicum, corn, beans)

Optional: a pinch of garam masala

Instructions:

Saute veggies.

Add water and noodles.

Add tastemaker and cook. Let cool slightly before packing.

Ingredients:

1 cup cooked rice

Veggies (carrot, beans, peas)

Ingredients:

Yogurt to knead dough

Knead everything into soft dough.
